Wood Fired Bread and Pizza classes
Travel back in time with Chef Instructor Chris French to learn the old-world technique of baking bread and pizza in an authentic wood-fired oven. Depending on the class, students will learn how to make Neapolitan pizza with live fire in the oven, explore the use of preferments (that add flavor and structure to bread), and bake artisan bread on the hearth. Class runs approximately 4 hours for the pizza classes starting mid morning and run until early afternoon. You will have lecture and hands-on experience, and ultimately take your bread and/or pizza home.
Class will be held rain or shine as the lecture will be under cover, and the oven is not affected by rain or weather. Our space is predominantly outdoors and will be no problem to stay socially distant from one another.
Don’t worry if you do not have a wood fired oven. All of the lessons can be applied and used for home baking. Techniques that can be used in a home oven will be explained.
For the past 10 years, Chef Instructor Chris French has been an adjunct baking and pastry instructor at Manchester Community College, and is Serve Safe certified. He has worked in the baking trade. has a baking degree from MCC as well as professional training through the Bread Guild and King Arthur, and is a Certified Bread Baker through the Bread Bakers Guild of America. He has also worked on and constructed several wood fired ovens.
